The brewery was Aurora, Colorado’s first when owners Kevin DeLange and Michelle Reding opened with a 7 BBL brewhouse in a 900-square-foot space in 2005.
This small hard cheese mold with follower will work with any of our presses and can be use to make up to a two pound cheese, from two gallons of milk. This sturdy mold can handle a pressing weight of up to 100 lbs. The open bottom on this cheese mold provides ideal drainage. Since this mold does not need the amount of weight, for pressing, as larger cheese molds, it does not need a closed bottom to contain the curd mass.
